Lactose (½kg)Lactose is a non-fermenting sweetener. Ideal for use with ciders, where you might prefer a medium or sweet cider but still have the alcohol content at a reasonable level. Use lactose to sweeten your cider or beer without the risk of further fermentation. Add it at the same time as you add the fermenting sugar. The yeast will ferment the sugar, to give the alcohol, but will not touch the lactose, leaving it to give sweetness. One bag per 40-pint brew will turn a dry cider into a medium. For more sweetness, simply add more lactose!
